What is raclette? It's the name of a cheese and the name of a quintessential aprés-ski sharing dish named after the cheese. Raclette is made with cows milk and has a wonderful creamy texture and a salty, slightly sweet, nutty flavor. It gets its name from the French word "racler" meaning "to scrape". Traditionally, you prepare raclette by heating it and, once soft and melted, you scrape it over the food you are serving it with.
